Dinner Picttures

Hey there-

I am going to start posting pictures of the dinners I make each night, along with the recipes (if you can call them that, I kind of don't measure and it always comes out delic, but I'll do my best to give you full recipes) that you can try!

Tonight I'm making meatloaf & yukon gold mashed potatoes....I'm sure most of you have your own recipes for this, but I substitute alot of things so its not as fatty...and honestly tastes awesome..I am the pickest eater!!

Why is it that the most simple clothing item somehow becomes so hot with a lil bling? Maybe I am just a little over the top and gaughty!


iPhone Runs my World

Yes, I have to admit it- I AM A JUNKIE. I was so anti iPhone at first (I guess I was in fear of seperation anxiety from my keyboard and rejecting a full out touch screen phone) but now I am obsessed. God forbid I don't have a video camera or my celebrity gossip columns handy at all times right? Please post and don't make me feel like I am the only geek obsessed with my rectangular slice of heaven :)

Mattress- THANK GOD!!!!!!!!!!

Finally- my husband and I got a new mattress today- if you are near an American Mattress, stop in- their mattresses are like, 50% off!!!!!!

Jerseylicious- Not too tasty???

Hopefully I am not the only lunatic who watches Jerseylicious- ok, I am sure I'm not. What is my obsession with this show? I googled it a few weeks ago and was told the girls on the show don't even work at the salon, and that they don't even accept new clients there? Maybe I should prank call them to see...LOL

OK, so we've established I love to hate the show....I guess just a few things...I am a lil flashy, well, used to be anyway- but never wore cheap clothes like these girls do. I'm not made of money, but you can definitely find clothes that aren't outrageously priced but don't look like they are falling apart or that you can see right thru because the material is so cheap (AKA everything Tracy and Olivia wear LOL). 

What drives you crazy about this show (enough that you just cant stop watching like me!! )??

Dinner Time

I don't care if you have 14 kids, or just a cat and a demanding job- we don't have hours upon end to make dinner. If you think of a stereotypical " old school" Italian man, my husband is probably popping into your heads right now. He wants a BIG, homemade dinner every night- I love to cook, so its something I don't mind doing at all- but I am always strapped for time, especially with a new baby in the house that I have to plan my day around.

Not only does he want this homeade dinner, he also wants me to somehow make it healthy (this guy wants everything with breading, so imagine my frustration, LOL).

I have started to do some little things to keep the flavor in our food. Here's a few examples. We LOVE breaded chicken and steaks- MAJOR FAT there because normally they are fried. I bread (either with bread crumbs or flour) them , place them on a creased cookie sheet, and then coat them with non-fat oil (they usually have olive oil or canola sprays at the grocery store). I pop them into the oven and they crisp up SOOO nicely, you'd think they cooked in a deep fryer. There's so much flavor, and like literally no fat. I will make this with a little bit of pasta (don't be like us and make a whole pound for 2 people, LOL- maybe half a box) and its usually pretty filling. The trick is to always serve meat w/ pasta, it helps fill up your belly. You can also do roasted potatoes w/ non fat butter, olive oil and lemon juice- add some spices, they are SO TASTY. To save time, I always try to prep my meal during down time- if I have an extra 20 minutes while my peanut is sleeping, I'll bread the meat and refridgerate it until its time to put it in the oven, this way thats a big piece of work outta my way.

We aren't vegetable people or the kind that want to eat ground chicken to avoid fat- I use all lean meat and prepare it in a smart way that keeps flavor but still isn't going to make you blow up like the kool-aid man.

Why not?

So there it was, a Saturday night in Chicago and the hubby and I wanted to go to dinner with some friends. Being the good little Italian wife and mama that I am, most of the time (meaning at least 5 nights a week), I cook- and I cook good- but once a week, I like to go out and enjoy a nice meal that I didn't have to make myself.
So there it was, a Saturday night in Chicago and the hubby and I wanted to go to dinner with some friends.  Most parents would catch the early bird special at a TGI Fridays, but no, we take our 3 1/2 month old baby to a nice Italian restaurant in downtown Chicago. What can I say, I guess we are lucky- he sits quietly and doesn't cry, so why not go out and enjoy ourselves right?

Believe it or not- you can have a life when you have a baby- even if you have to bring them along. My husband and I literally have taken our son to some really nice places and, although we may look a little odd with a Dr. Brown bottle on the table, manage to enjoy ourselves! At first I was a little skeptical because I didn't want to be " that couple" with a baby, but then I said, screw it, why should I be ordering pizza at home when I wouldn't mind a martini and a nice pasta dish?

So, if you are in Chicago and looking for some nice " kid friendly" places to eat that don't have cheap plastic crayons and coloring sheets, I recommend a few that have been really great for us :

I'm laughing a little bit as I write this because a few years ago, I was totally one of those people that thought children should be banned from restaurants after 6pm- but I guess the story changes when you are the one lugging around your own little meatball!
